It can be a side dish, the main course and, it’s excellent to prep for meal plans at the beginning of the week to save on lunches at work and school. The best part about this chili is it’s super healthy and inspired by the Paleo diet, which is the idea of eating like our pre-agricultural revolution ancestors. We recommend making this the day before you eat it because it gives the flavors time to settle and mingle together for a more full-bodied taste.
- 1 dried chipotle pepper with the stem removed
- 1 cup boiling water
- 1 ½ teaspoons coconut oil
- 1 cup finely chopped yellow onion
- 2 cups chopped green bell pepper, with seeds removed
- 2 cups chopped red bell pepper, with seeds removed
- 1 pound ground bison (can substitute beef)
- ½ pound spicy ground pork sausage (can substitute turkey sausage)
- 4 cloves garlic, minced
- 1 tablespoon chili powder
- 1 tablespoon ground cumin
- 1 teaspoon dried oregano
- 15 drops unflavored CBD oil (alter serving depending on how many days you’re intending to eat the chili)
- 1 teaspoon unsweetened cocoa powder
- 1 teaspoon Worcestershire sauce
- 1 can crushed tomatoes
- 1 ½ teaspoon salt
- ½ teaspoon ground pepper
To begin, start boiling your water. While that’s getting going, melt your coconut oil in a large pot on medium heat. Stir in the onion, green and red bell peppers and cook them until tender- which should take around 5 to 10 minutes. Once your water starts boiling, boil the chipotle pepper for around 10 minutes and then remove it from the separate pot and mince the pepper. In your water-free pot, stir in the minced pepper in garlic for about a minute until the stew becomes fragrant. Then stir in your bison and sausage. Cook and stir the meat until it becomes brown and crumbles. Next, stir in your chili powder, CBD oil, oregano, cocoa powder, and the Worcestershire sauce. Add your crushed tomatoes, pepper, salt and stir. Bring to a low boil and then reduce the heat to low to allow the mixture to simmer and the flavors to meld together well.
